Shechita – Kosher slaughter (the slaughtering of animals for food according to Jewish law)

Shochet – Kosher slaughterer

Shochtim – Kosher slaughtermen

Chalif – Shechita knife

Ofot – Poultry

Dakot – Small mammals such as sheep, goats, and veal

Gasot – Large mammals such as cattle, elk, and bison

Shulchan Aruch – A preeminent book of Jewish law

Kabbalah – Certification (for kosher slaughter)

Hoda’a – Recommendation for certification (used when sending a shochet for testing)

Neveila – An animal which died in any way other than through kosher slaughter

Treifa – An animal which was killed kosher but was ruled not kosher after the fact as a result of pre-existing sickness or injury

Bedika – Checking (inspection of animals after slaughter for signs of sickness or injury)

Kashering – To make kosher
